Ingredients
  

  • 4 boneless, skinless chicken thighs (or breasts)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • ½ onion, finely chopped
  • ½ cup sun-dried tomatoes, chopped
  • 1½ cups chicken broth
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 1½ cups orzo pasta
  • 1 cup grated parmesan cheese
  • 1 tsp dried oregano
  • ½ tsp thyme
  • ½ tsp chili flakes (optional)
  • Salt & pepper, to taste
  • Fresh basil, for garnish

Instructions
 

  • Sear Chicken: Season chicken with salt and pepper. Heat olive oil in skillet and sear until golden. Remove and set aside.
  • Build Sauce Base: In the same skillet, sauté garlic and onion until fragrant. Add sun-dried tomatoes.
  • Add Liquids & Orzo: Pour in broth and cream. Stir in orzo. Return chicken to skillet.
  • Simmer: Cook uncovered, stirring occasionally, until orzo is tender and sauce thickens (12–15 minutes).
  • Finish: Stir in parmesan and herbs. Adjust seasoning.
  • Serve: Garnish with basil and extra parmesan. Serve hot.
