Ingredients
  

  • 1 (14.75 oz) can pink or sockeye salmon (drained, skin/bones removed if preferred)
  • 1 large egg
  • 1/3 cup finely chopped onion
  • 1/4 cup cornmeal (or breadcrumbs/cracker crumbs)
  • 1/4 cup all-purpose flour
  • 1 tbsp mayonnaise or 1–2 tbsp milk (for moisture)
  • 1 tsp lemon juice
  • 1/2 tsp Old Bay seasoning (or Cajun seasoning)
  • 1/4 tsp black pepper
  • 2 tbsp chopped parsley (optional)
  • Vegetable or canola oil for frying

Instructions
 

Prep the Salmon:

  • Drain the canned salmon and flake it into a large mixing bowl. Remove any bones and skin if desired (they're edible but can be removed for smoother texture).

Mix the Patties:

  • Shape the mixture into 6–8 equal-sized patties, about 2.5 to 3 inches in diameter. Chill in the fridge for 10–15 minutes if time allows (helps hold shape).

Heat Oil:

  • In a skillet over medium-high heat, add 2–3 tablespoons of oil. When shimmering, it's ready.

Fry the Patties:

  • Fry patties in batches (don’t crowd the pan), cooking 3–4 minutes per side until deep golden brown and crispy. Flip gently with a spatula.

Drain & Serve:

  • Place patties on paper towels to drain excess oil. Serve hot with lemon wedges, tartar sauce, or a creamy remoulade.

  • Make Ahead: Prepare mixture up to 1 day in advance and refrigerate until ready to cook.
  • Baking Option: Bake at 400°F (200°C) for 15–18 minutes, flipping halfway through.
