Ingredients
  

For the Crust:

  • 1 ½ cups graham cracker crumbs or crushed digestive biscuits
  • ¼ cup melted butter
  • 2 tbsp sugar or honey

For the Filling:

  • 2 cups Greek yogurt (full-fat recommended)
  • 1 package (3 oz) flavored Jello or 2 tsp gelatin powder
  • ½ cup sugar or honey (adjust based on Jello sweetness)
  • 1 tsp vanilla extract
  • Zest of 1 lemon
  • Optional: ½ cup fresh berries, chocolate chips, or crushed cookies

For Garnish:

  • Fresh fruit (berries, kiwi, or mango)
  • Mint leaves
  • Optional: drizzle of honey or chocolate shavings

Instructions
 

  • Prepare Crust: Mix crumbs, melted butter, and sugar/honey. Press into the bottom of an 8-inch springform pan. Chill 10–15 minutes.
  • Bloom Gelatin: Sprinkle gelatin over ¼ cup cold water and let sit 3–5 minutes.
  • Dissolve Gelatin: Warm gently in saucepan or microwave until fully dissolved (do not boil).
  • Mix Filling: Combine Greek yogurt, sweetener, vanilla, and lemon zest. Gradually fold in dissolved gelatin, whisking gently.
  • Add Mix-Ins: Fold in optional berries, chocolate chips, or crushed cookies.
  • Layer & Pour: Pour filling over chilled crust. For layered effect, alternate yogurt and colored gelatin layers with swirls.
  • Chill: Cover and refrigerate at least 4–6 hours or overnight until set.
  • Garnish & Serve: Decorate with fresh fruit, mint, or drizzle honey before slicing. Slice with warm knife for clean edges.

  • Use full-fat Greek yogurt for creamier texture.
  • Bloom gelatin properly to avoid lumps.
  • Chill overnight for best set and flavor melding.
