Equipment

  • Box grater (or food processor)
  • Mixing bowls
  • Frying pan or skillet
  • Spatula
  • Paper towels
  • Optional: air fryer or oven for baked version

Ingredients

For the Latkes:

  • 2 large Russet potatoes (or a mix with Yukon Gold)
  • 1 small onion, finely grated
  • 2 large eggs, beaten
  • 2–3 tbsp flour (or gluten-free alternative: rice flour/chickpea flour)
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ tsp garlic powder (optional)
  • ¼ cup neutral oil (canola, vegetable, or avocado) for frying

For Serving / Toppings (Optional):

  • Fresh herbs (chives, parsley, dill)
  • Flaky sea salt
  • Greek yogurt or sour cream
  • Smoked salmon or avocado slices
  • Hot sauce or chili flakes for a kick

Instructions

Prepare the Latke Base:

  • Peel and grate potatoes. Grate the onion.
Place grated potatoes in a towel or sieve; squeeze out excess moisture.
Transfer to a bowl, season with salt, pepper, and optional garlic powder.

Bind the Latkes:

  • Mix in 2 beaten eggs and flour (or gluten-free alternative) until combined.

Form the Latkes:

  • Shape the mixture into small, even patties. Press slightly for even frying.

Fry to Golden Perfection:

  • Heat oil in a skillet over medium-high heat.
Fry latkes 3–4 minutes per side until golden brown and crispy.
Remove and drain on paper towels.

Cook the Eggs:

  • Fry eggs separately or crack an egg into a shallow well in each latke.
Cook until yolks reach your desired doneness.

Serve:

  • Arrange latkes on plates, top with eggs, sprinkle herbs, and add optional toppings.
    Serve immediately for best texture.

Notes

  • Crispy latkes tip: Drain potatoes thoroughly and preheat the pan. Avoid overcrowding.
  • Gluten-free option: Substitute flour with rice flour or chickpea flour.
  • Variations: Add shredded cheese, zucchini, carrots, or fresh herbs for extra flavor.
  • Reheating: Use an oven or air fryer to maintain crispiness; avoid microwaving.
  • Make ahead: Latke mixture can be prepared and refrigerated for up to 12 hours before frying.
