Equipment

  • Springform pans (for layering)
  • Food processor (for nut mixture)
  • Saucepan (for syrup)
  • Offset spatula (for frosting)
  • Cooling racks

Ingredients

Cake Base

  • 2 cups all-purpose flour (or almond flour for gluten-free)
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • 1 cup sugar
  • ½ cup butter, softened
  • 3 large eggs
  • 1 cup yogurt or sour cream
  • 1 tsp vanilla extract

Nut Filling

  • 1 cup walnuts, pistachios, or almonds (toasted & chopped)
  • 2 tbsp sugar
  • 1 tsp cinnamon
  • ½ tsp cardamom

Syrup

  • ½ cup honey
  • ½ cup sugar
  • ½ cup water
  • Juice of ½ lemon
  • 1 cinnamon stick

Optional Garnishes

  • Filo shards
  • Chopped nuts
  • Honey drizzle

Instructions

  • Prepare Syrup: In a saucepan, combine honey, sugar, water, lemon juice, and cinnamon stick. Simmer until slightly thickened. Cool.
  • Make Nut Filling: Pulse toasted nuts with sugar and spices in a food processor until finely chopped.
  • Bake Cake Layers: Prepare batter by creaming butter and sugar, then adding eggs, yogurt, and vanilla. Mix in dry ingredients. Divide into pans and bake at 350°F (175°C) for 45–50 minutes. Cool completely.
  • Layer Cake: Place one cake layer on a serving plate. Spread nut filling evenly. Top with second cake layer.
  • Drizzle Syrup: Pour cooled syrup over cake layers, allowing it to soak in for moisture.
  • Frost (Optional): Spread honey buttercream or whipped cream over the cake for added richness.
  • Garnish: Decorate with filo shards, chopped nuts, or syrup drizzle.

Notes

  • Variations: Try chocolate syrup, orange blossom infusion, or mini baklava cupcakes.
  • Storage: Refrigerate up to 5 days; freeze slices individually for up to 2 months.
  • Serving: Best served chilled to allow syrup absorption.
  • Pairings: Perfect with Turkish coffee or mint tea.
  • Common Mistakes: Drizzle syrup generously to avoid dryness, toast nuts to prevent sogginess, and balance sweetness with lemon juice.
