- 2 cups all-purpose flour (or whole wheat/oat flour)
- 1 tsp baking soda
- ½ tsp salt
- 1½ tsp cinnamon
- ¼ tsp nutmeg
- ½ cup oil or melted butter
- ½ cup brown sugar
- ¼ cup white sugar
- 2 eggs
- ½ cup sour cream or Greek yogurt
- 2 cups peeled and diced apples (Granny Smith, Honeycrisp, or mixed)
- Optional: ½ cup chopped walnuts, raisins, or cranberries
Preheat oven to 350°F (175°C). Grease or line loaf pan with parchment paper.
Whisk dry ingredients: flour, baking soda, salt, cinnamon, and nutmeg.
In a separate bowl, mix wet ingredients: oil/butter, sugars, eggs, and sour cream/yogurt until smooth.
Fold dry into wet gently. Stir in apples and optional add-ins.
Pour batter into loaf pan and smooth the top.
Bake for 55–60 minutes. Check with a toothpick—it should come out clean or with a few moist crumbs.
Cool in pan for 15 minutes, then transfer to a rack to cool completely before slicing.
-
Use a mix of tart and sweet apples for depth of flavor.
-
Don’t overmix—gentle folding keeps the bread tender.
-
Add flaxseed or chia for extra fiber.
-
Store at room temp for 3 days, refrigerate for 1 week, or freeze up to 3 months.
-
Try muffin tins or mini loaf pans for individual portions.
-
Sprinkle powdered sugar or drizzle glaze for a pretty finish.
