Ingredients
  

  • 2 cups all-purpose flour (or whole wheat/oat flour)
  • 1 tsp baking soda
  • ½ tsp salt
  • 1½ tsp cinnamon
  • ¼ tsp nutmeg
  • ½ cup oil or melted butter
  • ½ cup brown sugar
  • ¼ cup white sugar
  • 2 eggs
  • ½ cup sour cream or Greek yogurt
  • 2 cups peeled and diced apples (Granny Smith, Honeycrisp, or mixed)
  • Optional: ½ cup chopped walnuts, raisins, or cranberries

Instructions
 

  • Preheat oven to 350°F (175°C). Grease or line loaf pan with parchment paper.
  • Whisk dry ingredients: flour, baking soda, salt, cinnamon, and nutmeg.
  • In a separate bowl, mix wet ingredients: oil/butter, sugars, eggs, and sour cream/yogurt until smooth.
  • Fold dry into wet gently. Stir in apples and optional add-ins.
  • Pour batter into loaf pan and smooth the top.
  • Bake for 55–60 minutes. Check with a toothpick—it should come out clean or with a few moist crumbs.
  • Cool in pan for 15 minutes, then transfer to a rack to cool completely before slicing.

  • Use a mix of tart and sweet apples for depth of flavor.
  • Don’t overmix—gentle folding keeps the bread tender.
  • Add flaxseed or chia for extra fiber.
