Ingredients
  

  • 1 lb beef tenderloin, cut into 1-inch cubes
  • 2 tbsp olive oil
  • Salt & pepper, to taste
  • 2 cups mushrooms, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme leaves
  • 1 tsp fresh rosemary, chopped
  • 2 tbsp Dijon mustard
  • 2 sheets puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Fresh parsley, for garnish

Instructions
 

  • Prepare Beef: Season beef cubes with salt and pepper. Sear in hot skillet with olive oil until browned. Rest.
  • Make Duxelles: Sauté mushrooms, garlic, thyme, and rosemary until moisture evaporates. Cool slightly.
  • Assemble Pastry: Roll puff pastry and cut into squares. Spread a thin layer of duxelles, place beef cube, and brush with Dijon mustard.
  • Wrap & Seal: Fold pastry around beef, sealing edges tightly. Place seam-side down on baking sheet.
  • Egg Wash & Bake: Brush tops with beaten egg. Bake at 400°F (200°C) for 15–20 minutes until golden.
  • Serve: Garnish with parsley. Serve warm with dipping sauces.
