Equipment

  • Large mixing bowl
  • Loaf pan (9x5 inch)
  • Wooden spoon or spatula
  • Measuring Cups and Spoons
  • Oven

Ingredients

  • 2 lbs ground beef (80/20 preferred)
  • 1 cup breadcrumbs
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 large eggs
  • ½ cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp dried thyme

Glaze:

  • ½ cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard

Instructions

  • Preheat Oven: Set oven to 350°F (175°C).
  • Mix Ingredients: In a large bowl, combine ground beef, breadcrumbs, onion, garlic, eggs, milk, Worcestershire sauce, salt, pepper, and thyme. Mix gently until just combined.
  • Shape Meatloaf: Transfer mixture into a greased loaf pan, shaping evenly.
  • Prepare Glaze: In a small bowl, whisk together ketchup, brown sugar, and Dijon mustard. Spread half over the meatloaf.
  • Bake: Bake for 45 minutes. Remove, spread remaining glaze, and bake for another 10–15 minutes until internal temperature reaches 160°F (71°C).
  • Rest & Serve: Let meatloaf rest for 10 minutes before slicing. Serve with mashed potatoes and green beans.

Notes

  • Don’t Overmix: Mixing too much makes meatloaf dense.
  • Use 80/20 Beef: Ensures juicy texture.
  • Add Veggies: Finely grated carrots or bell peppers add moisture.
  • Make Ahead: Assemble and refrigerate up to 24 hours before baking.
  • Storage: Refrigerate leftovers in an airtight container for 3–4 days or freeze for up to 3 months.
  • Reheating Tip: Add a splash of sauce or broth before reheating to keep moist.
