Ingredients
  

  • 2 lbs ground chicken
  • 1 cup breadcrumbs
  • ½ cup grated Parmesan cheese
  • ½ cup milk
  • 2 large eggs
  • 3 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil (for brushing)

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a loaf pan lightly.
  • In a large bowl, combine ground chicken, breadcrumbs, Parmesan, milk, eggs, garlic, and seasonings. Mix gently until just combined.
  • Transfer mixture to loaf pan, shaping evenly. Brush top with olive oil.
  • Bake for 45–50 minutes, until golden and internal temperature reaches 165°F (74°C).
  • Rest meatloaf for 10 minutes before slicing. Garnish with parsley.
  • Serve with mashed potatoes, roasted vegetables, or a fresh salad.
