Ingredients

  • 1 red bell pepper, sliced
  • 1 zucchini, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach

Herbs & Finishing Touches:

  • 1 tsp dried oregano
  • 1 tsp fresh basil, chopped
  • 2 tbsp fresh parsley, chopped
  • Juice of 1 lemon
  • Optional: ½ cup crumbled feta cheese

Instructions
 

  • Prepare Chicken: Slice chicken thinly for quick cooking. Season with garlic powder, salt, and pepper.
  • Cook Chicken: Heat olive oil in a skillet or wok over high heat. Stir-fry chicken until golden and cooked through (5–7 minutes). Remove and set aside.
  • Stir-Fry Vegetables: In the same skillet, add bell peppers and zucchini. Cook for 3–4 minutes until slightly tender. Add cherry tomatoes and spinach, cooking just until wilted.
  • Combine & Season: Return chicken to the skillet. Add oregano, basil, and parsley. Toss everything together until well coated.
  • Finish: Squeeze lemon juice over the stir-fry and sprinkle with feta if desired. Serve immediately.
