Ingredients
  

Meatloaf:

  • 1 lb ground beef (or ½ lb beef + ½ lb pork)
  • ¾ cup breadcrumbs
  • 2 eggs
  • ½ cup milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tbsp chopped parsley
  • Salt and pepper to taste

Mushroom Gravy:

  • 1½ cups sliced mushrooms (cremini or button)
  • 2 tbsp butter
  • 2 tbsp flour
  • 1½ cups beef broth
  • 1 tsp Worcestershire sauce
  • ½ tsp thyme
  • Optional: 2 tbsp cream or 1 tbsp red wine

Optional Add-ins:

  • ¼ cup grated Parmesan cheese
  • 1 tsp Dijon mustard
  • Balsamic glaze drizzle
  • Bacon strips for topping

Instructions
 

  • Preheat oven to 350°F (175°C). Grease a loaf pan or line a baking sheet with parchment.
  • In a skillet, sauté onion and garlic until soft. Let cool.
  • In a mixing bowl, combine ground meat, breadcrumbs, eggs, milk, sautéed aromatics, Worcestershire sauce, thyme, parsley, salt, and pepper. Mix gently.
  • Shape into a loaf and place in pan. Top with bacon strips if using.
  • Bake for 45–60 minutes, or until internal temp reaches 160°F.
  • Meanwhile, make gravy: sauté mushrooms in butter until browned. Stir in flour to form a roux.
  • Gradually whisk in broth, Worcestershire sauce, and thyme. Simmer until thickened. Add cream or wine if desired.
  • Let meatloaf rest for 10 minutes before slicing. Serve with warm mushroom gravy.
