Ingredients
  

  • ½ cup unsalted butter
  • 1 cup all-purpose flour (or rice flour for gluten-free)
  • 1 cup sugar
  • 1 cup milk (or almond milk for vegan)
  • 1 tsp vanilla extract
  • 1 can (21 oz) lemon pie filling or 2 cups lemon curd
  • Optional: fresh lemon zest for garnish

Instructions
 

  • Melt Butter: Place butter in baking dish and melt in oven at 350°F (175°C).
  • Prepare Batter: Whisk flour, sugar, milk, and vanilla until smooth.
  • Layer Batter: Pour batter over melted butter. Do not stir.
  • Add Lemon Filling: Spoon lemon pie filling or curd evenly over batter. Again, do not mix.
  • Bake: Bake for 40–45 minutes until golden and bubbling.
  • Serve: Cool slightly, garnish with lemon zest or powdered sugar, and serve warm with ice cream or whipped cream.
