Equipment

  • Large baking sheet or cast-iron skillet
  • Skillet (for cooking protein)
  • Mixing bowls
  • Oven

Ingredients

  • 1 large bag thick tortilla chips
  • 2 cups shredded cheddar or Monterey Jack cheese
  • 1 lb ground beef, chicken, or pulled pork
  • 1 cup black beans or refried beans
  • 1 cup diced tomatoes
  • ½ cup sliced jalapeños
  • ½ cup diced onions
  • ½ cup corn kernels
  • Toppings: salsa, guacamole, sour cream, fresh cilantro
  • Seasonings: cumin, chili powder, garlic powder, salt, pepper

Instructions

  • Prepare protein and beans: Cook ground beef, chicken, or pork in a skillet with cumin, chili powder, garlic powder, salt, and pepper until browned. Warm beans in a saucepan.
  • Layer chips and toppings: Preheat oven to 375°F (190°C). Spread tortilla chips on a baking sheet. Add half the cheese, then spoon over beans and protein. Repeat with another layer of chips, cheese, and toppings.
  • Bake until cheese melts: Bake for 10–12 minutes until cheese is melted and bubbly. Broil for 1–2 minutes for extra crispness.
  • Add fresh toppings: Remove from oven and top with tomatoes, jalapeños, onions, corn, salsa, guacamole, sour cream, and cilantro.
  • Serve: Present on the baking sheet or in a cast-iron skillet for rustic style. Slice into portions or serve family-style.

Notes

  • Tip: Use thick, sturdy chips to hold toppings.
  • Make-ahead: Prep protein and toppings in advance, but assemble and bake just before serving.
  • Variations: Try BBQ pulled pork, vegetarian with beans and veggies, or breakfast nachos with eggs and bacon.
  • Serving idea: Pair with margaritas or beer for the ultimate party platter.
