Ingredients
  

  • 3 cups mashed potatoes (russet or Yukon gold, cooled)
  • 1 cup shredded cheddar cheese (or mozzarella/pepper jack)
  • ½ cup cooked bacon bits
  • ¼ cup chopped scallions or chives
  • ½ cup flour
  • 2 eggs, beaten
  • 1½ cups breadcrumbs (panko for extra crunch)
  • Oil for frying (or cooking spray for baking)
  • Optional: jalapeños, ranch or sour cream dip

Instructions
 

  • Prep: Make mashed potatoes and let them cool completely.
  • Mix: Fold in cheese, bacon, and scallions until evenly combined.
  • Shape: Scoop mixture and roll into balls. Place on a baking sheet and chill for 30 minutes to firm.
  • Coat: Dredge each ball in flour, dip in egg wash, then roll in breadcrumbs. For extra crunch, double-coat.
  • Cook:
    -Fry: Heat oil to 350°F. Fry balls in batches until golden brown, about 3–4 minutes. Drain on paper towels.
    -Bake: Place on greased baking sheet. Bake at 400°F for 15–20 minutes until crisp.
    -Air-fry: Cook at 375°F for 12–15 minutes, shaking halfway through.
  • Serve: Enjoy hot with sour cream, ranch, or spicy aioli.

Notes

  • Make-ahead: Shape and coat balls, then freeze. Fry or bake straight from frozen.
