Ingredients
  

  • 1 ½ cups rolled oats
  • 1 cup all-purpose flour (or almond flour for gluten-free)
  • ¾ cup brown sugar
  • ½ cup melted butter (or coconut oil for vegan)
  • 1 can (14 oz) sweetened condensed milk (or Greek yogurt for lighter version)
  • ½ cup fresh lemon juice
  • Zest of 2 lemons
  • Pinch of salt
  • Optional: coconut flakes, berries, or nuts for topping

Instructions
 

  • Prepare crust: Mix oats, flour, brown sugar, melted butter, and salt. Press firmly into parchment-lined pan.
  • Bake crust: Bake at 350°F (175°C) for 10–12 minutes until lightly golden.
  • Make filling: Whisk condensed milk, lemon juice, and zest until smooth.
  • Assemble bars: Pour filling over crust. Sprinkle reserved oat mixture (plus optional coconut flakes or berries) on top.
  • Bake again: Return to oven for 20–25 minutes until filling is set and topping golden.
  • Cool & slice: Cool completely, refrigerate for 1 hour, then slice into bars.
