Ingredients
  

  • 14 oz kielbasa sausage, sliced into rounds
  • 4 medium potatoes, diced (Yukon Gold or Russet)
  • 1 medium onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup milk or cream (tempered)
  • 1 cup shredded cheddar or white cheddar cheese
  • 2 tbsp olive oil or butter
  • 1 tsp thyme
  • Salt & pepper to taste
  • Fresh parsley or dill for garnish

Instructions
 

  • Brown Kielbasa: Heat oil in a large pot. Brown kielbasa slices until crisp. Remove and set aside.
  • Sauté Vegetables: In the drippings, cook onion, carrots, celery, and garlic until softened.
  • Add Potatoes & Broth: Stir in diced potatoes and pour in broth. Simmer 15–20 minutes until potatoes are tender.
  • Add Dairy: Warm milk or cream separately, then stir into soup to prevent curdling.
  • Add Cheese: Stir in shredded cheddar until melted and smooth. Return kielbasa to the pot.
  • Season & Garnish: Adjust salt and pepper carefully (kielbasa is salty). Garnish with parsley or dill.
  • Serve Hot: Ladle into bowls and enjoy with crusty bread.

  • Always brown kielbasa first for maximum flavor.
