Ingredients
  

  • 1 lb ground beef, lamb, or combo
  • 1/2 cup almond flour or crushed pork rinds (binder)
  • 1/4 cup crumbled feta cheese
  • 2 tbsp grated Parmesan
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh oregano, chopped
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil (for pan-frying or drizzling)
  • Optional: smoked paprika, chili flakes, or cinnamon
  • Optional keto-friendly sauce: tzatziki or low-carb tomato sauce

Instructions
 

  • Prep Ingredients: Grate Parmesan, crumble feta, chop herbs, mince garlic, and zest lemon.
  • Mix Meatball Base: In a large bowl, combine ground meat, keto binder, egg, feta, Parmesan, herbs, garlic, lemon zest, salt, and pepper. Fold gently until just mixed.
  • Form Meatballs: Use a cookie scoop or hands to make evenly sized meatballs (~1.5 inches).
  • Cook Meatballs:
    Oven: Preheat to 400°F (200°C), place meatballs on parchment-lined baking sheet, bake 18–20 minutes until 160°F internally.
    Skillet: Heat olive oil over medium heat, brown meatballs 8–10 minutes, cover and cook additional 5 minutes until done.
  • Optional Sauce: Serve with keto tzatziki or low-carb tomato sauce.
  • Serve: Pair with zucchini noodles, cauliflower rice, or Greek salad. Garnish with parsley, crumbled feta, or lemon wedges.

  • Use meat with 20–25% fat for juiciness.
