Ingredients
  

For the Chicken

  • 4 boneless skinless chicken breasts

Instructions
 

Step 1: Prepare the Chicken

  • Preheat oven to 375°F (190°C).Place chicken breasts on a cutting board and carefully cut a pocket into the thick side of each breast without cutting all the way through.
    Season both sides of the chicken with salt, pepper, garlic powder, and paprika.
    Tip: Pat the chicken dry before seasoning for better browning.

Step 2: Make the Jalapeño Popper Filling

  • In a mixing bowl combine:
    Cream cheese
    Shredded cheddar cheese
    Diced jalapeños
    Crumbled bacon
    Minced garlic
    Green onions
    Mix until smooth and evenly combined.

Step 3: Stuff the Chicken

  • Spoon the filling into each chicken pocket.
    Press gently to pack the filling inside. If necessary, secure the opening with toothpicks to prevent the filling from spilling out.

Step 4: Sear the Chicken (Optional)

  • Heat olive oil in a skillet over medium-high heat.
    Sear the stuffed chicken for 2–3 minutes per side until lightly golden. This step adds extra flavor.

Step 5: Bake the Chicken

  • Transfer chicken to a baking dish and place in the oven.
    Bake for 20–25 minutes, or until the internal temperature reaches 165°F (74°C).

Step 6: Rest and Serve

  • Remove chicken from the oven and allow it to rest for 5 minutes before serving.
    Garnish with parsley, extra cheese, or bacon if desired.

  • Remove jalapeño seeds if you prefer a milder spice level.
  • Use room-temperature cream cheese so the filling mixes smoothly.
