Ingredients
  

  • 2 pork tenderloins (about 24 oz total)
  • 2–3 fresh jalapeños, finely chopped
  • ¼ cup honey or apricot preserves
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp sesame oil
  • 2 cloves garlic, minced
  • 1 tsp fresh grated ginger
  • Optional: 1 tbsp lime juice, pinch of red pepper flakes, peach or pineapple preserves

Instructions
 

  • Make the Glaze Mix jalapeños, honey/preserves, soy sauce, sesame oil, garlic, ginger, and optional lime juice or red pepper flakes.
  • Marinate the Pork Place pork in a zip-top bag or dish. Pour glaze over and refrigerate for 12–24 hours.
  • Sear the Pork Preheat oven to 425°F (220°C). Heat skillet over medium-high. Remove pork from marinade (reserve glaze) and sear all sides until browned.
  • Roast Transfer skillet to oven. Roast for 15–20 minutes, until internal temp reaches 145°F.
  • Rest and Slice Let pork rest 5–10 minutes. Slice into medallions.
  • Reduce Glaze Simmer reserved glaze in a saucepan until thickened. Drizzle over sliced pork.

  • Use fresh jalapeños for brighter flavor; remove seeds for less heat.
  • Don’t skip the rest period—it's key to juicy pork.
  • Glaze can be made ahead and stored in the fridge for up to 1 week.
