Main Ingredients
- 1 cup sweet corn (fresh, frozen, or canned & drained)
- 1–2 fresh jalapeños, diced (adjust heat to taste)
- ½ cup shredded cheddar cheese
- ½ cup cream-style corn
- ½ cup all-purpose flour
- ½ cup cornmeal
- 1 tsp baking powder
- 1 large egg
- ¼–⅓ cup milk or buttermilk
- ½ tsp salt
- ¼ tsp black pepper
Optional Add-Ins
- 2 green onions, sliced
- ¼ tsp smoked paprika
- ¼ tsp garlic powder
- ¼ cup Monterey Jack cheese
- 2 tbsp cream cheese (for extra creaminess)
Oil for Frying
- 2–3 cups vegetable, canola, or peanut oil
Fried Version
Prepare the batter: Combine flour, cornmeal, baking powder, salt, and pepper. Fold in corn, cream-style corn, jalapeños, and cheese. Mix wet ingredients (egg + milk) into dry until thick, scoopable batter forms.
Heat oil: Preheat oil to 350–375°F. Test with a small batter drop; it should sizzle immediately.
Scoop & fry: Use cookie scoop for uniform nuggets. Fry 2–3 minutes until golden, turning occasionally. Avoid overcrowding.
Drain & rest: Remove with slotted spoon. Drain on paper towels. Rest 2 minutes before serving.
Air Fryer Version
Chill batter 20–30 minutes for easier shaping.
Form small balls and lightly spray with oil.
Preheat air fryer to 375°F. Arrange nuggets in single layer.
Air fry 8–10 minutes, flipping halfway.
-
Adjust jalapeño seeds to control heat.
-
Ensure batter is thick enough to prevent falling apart.
-
Do not overcrowd pan — temperature drop leads to soggy nuggets.
-
Make-ahead tip: Prepare batter in advance or freeze cooked nuggets.
-
Serve with dips: ranch, chipotle mayo, spicy aioli, honey mustard, or sour cream.
-
Variations: add cayenne for extra heat, drizzle honey for sweet-spicy, include bacon, or stuff with cream cheese.
