- 1 packet (2 ¼ tsp) instant or active dry yeast
- 1 cup warm water or milk (110°F / 45°C)
- 1 tsp salt
- 1 tbsp sugar
- 2 tbsp olive oil
- 1 ½ cups shredded mozzarella
- ½ cup grated Parmesan or Asiago
- 2 tsp dried Italian herbs (oregano, basil, thyme) or 2 tbsp fresh, chopped
- Optional: garlic powder, onion powder, extra cheese for topping
Activate yeast in warm water (if using active dry yeast).
Mix flour, salt, sugar, and herbs; add yeast mixture and olive oil.
Knead dough until smooth and elastic (8–10 min by hand, 5 min with mixer).
Cover and let dough rise until doubled in size (~1 hour).
Gently fold in the cheese. Shape dough into a loaf and place in pan; allow second rise (~30 min).
Score the top, brush with olive oil, and sprinkle extra cheese if desired.
Bake at 375°F (190°C) for 25–30 minutes, until golden brown.
Cool slightly before slicing and serving.
