Ingredients
  

  • 1 lb fresh sardines, cleaned and filleted (or high-quality canned sardines)
  • 1 cup Italian-style breadcrumbs (or panko)
  • ½ cup grated pecorino or Parmesan cheese
  • 2 tbsp fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 2 cloves garlic, minced
  • Zest of 1 lemon
  • 2 tbsp capers (optional)
  • 2 tbsp olive oil (plus more for frying or baking)
  • Salt and pepper to taste

Instructions
 

  • Prep Sardines: Clean and fillet fresh sardines, then pat dry with paper towels.
  • Make Crust Mixture: Combine breadcrumbs, grated cheese, herbs, garlic, lemon zest, and capers in a bowl. Season with salt and pepper.
  • Coat Sardines: Brush sardines lightly with olive oil, then press into the breadcrumb mixture until evenly coated.
  • Cook Sardines:
    Pan-fry: Heat olive oil in a skillet over medium heat. Fry sardines for 2–3 minutes per side until golden and crispy.
    Bake: Preheat oven to 400°F (200°C). Arrange sardines on a baking sheet and bake for 8–10 minutes until crisp.
  • Serve Hot: Garnish with fresh parsley and a squeeze of lemon. Serve immediately for maximum crunch.

  • Best eaten fresh—sardines lose crispiness if stored too long.
  • Fresh herbs give the brightest flavor, but dried can be used in a pinch.
  • For extra crunch, use panko breadcrumbs or air fry instead of pan-frying.
