Equipment

  • Large skillet or cast-iron pan
  • Tongs
  • Whisk
  • Cutting board & knife
  • Measuring cups & spoons

Ingredients

  • 4 bone-in or boneless pork chops (1-inch thick)
  • 8 slices thick-cut bacon
  • ¼ cup pure maple syrup (or sugar-free for keto)
  • ½ cup heavy cream
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil or butter
  • 2 garlic cloves, minced
  • Salt & pepper to taste
  • Fresh parsley or chives (optional garnish)

Instructions

  • Prepare pork chops: Pat dry and season with salt and pepper. Wrap each chop with 2 slices of bacon.
  • Sear chops: Heat olive oil in skillet over medium-high. Sear chops until bacon is crisp and pork is golden (3–4 minutes per side).
  • Glaze with maple syrup: Brush or drizzle maple syrup over chops. Cook briefly to caramelize. Remove chops and keep warm.
  • Make Dijon cream sauce: In the same skillet, sauté garlic for 1 minute. Add cream, Dijon mustard, and pan drippings. Whisk until smooth and slightly thickened.
  • Combine: Return chops to skillet, spooning sauce over them.
  • Rest: Let chops rest for 5 minutes before serving.
  • Serve: Plate chops smothered in sauce. Garnish with parsley or chives.

Notes

  • Pork tip: Bone-in chops stay juicier; boneless cook faster.
  • Bacon tip: Thick-cut bacon wraps better and adds more flavor.
  • Maple syrup: Add near the end to avoid burning.
  • Sauce: Use heavy cream for richness; low-fat cream may thin out.
  • Storage: Refrigerate up to 3 days; freeze chops separately from sauce for 2 months. Reheat gently to retain texture.
  • Serving suggestion: Pair with mashed potatoes, roasted vegetables, or rice for a complete meal.
