Ingredients
  

For Meatloaf Base:

  • 2 lbs ground beef (or beef/pork blend)
  • 1 cup breadcrumbs
  • 1 egg
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tsp salt & ½ tsp pepper
  • 1 tsp dried herbs (thyme or oregano)

For Mac and Cheese Layer:

  • 1 lb elbow macaroni
  • 3 tbsp butter
  • 3 tbsp flour
  • 3 cups milk
  • 3 cups shredded cheddar (or cheese blend)
  • ½ tsp nutmeg (optional)
  • Salt & pepper to taste

Topping:

  • ½ cup breadcrumbs or extra cheese
  • Fresh parsley or crispy bacon for garnish

Instructions
 

  • Prepare Meatloaf: Mix ground meat, breadcrumbs, egg, onion, garlic, herbs, salt, and pepper. Shape into loaf in casserole dish. Bake at 375°F (190°C) for 25–30 minutes until partially cooked.
  • Cook Pasta: Boil macaroni until al dente. Drain and set aside.
  • Make Cheese Sauce: Melt butter in saucepan, whisk in flour to form roux. Gradually add milk, stirring until thickened. Stir in shredded cheese until smooth. Season with salt, pepper, and nutmeg.
  • Assemble Casserole: Spread macaroni in cheese sauce over meatloaf base. Sprinkle breadcrumbs or extra cheese on top.
  • Bake Again: Return to oven for 20–25 minutes until bubbly and golden.
  • Rest & Serve: Let casserole rest 10 minutes before slicing. Garnish with parsley or bacon.
