  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • ½ tsp salt
  • Black pepper to taste

  • 1 cup sliced carrots
  • 1 cup chopped bell peppers

Optional Toppings:

  • Sliced avocado

  • Chopped green onions
  • Lime wedges

Instructions

  • Marinate Chicken: In a bowl, mix olive oil, garlic, paprika, salt, and pepper. Coat chicken and let sit for 15 minutes.
  • Cook Chicken: Heat skillet over medium-high. Cook chicken 5–7 minutes per side until golden and cooked through. Let rest, then slice.
  • Make Hot Honey Glaze: In a saucepan, warm honey over low heat. Stir in chili flakes or sriracha and vinegar. Simmer 2–3 minutes, then remove from heat.
  • Prepare Grain Base: Cook rice, quinoa, or cauliflower rice according to package instructions. Fluff and set aside.
  • Cook Veggies: Steam or roast broccoli, carrots, and bell peppers until tender-crisp.
  • Assemble Bowls: Layer grains, veggies, and sliced chicken. Drizzle with hot honey glaze. Add toppings like avocado, sesame seeds, or lime wedges.

Notes

  • Use local honey for richer flavor and smoother texture.
  • For extra heat, add a dash of cayenne or chipotle powder to the glaze.
  • Make the glaze in bulk and store in a jar for future meals.
  • Store components separately for freshness and refrigerate up to 4 days.
  • Reheat chicken gently with a splash of broth to prevent drying.
  • For a vegan version, substitute chicken with crispy tofu or roasted chickpeas.
