Ingredients
  

For the Chicken:

  • 2 chicken breasts or thighs
  • 2 tbsp honey
  • Juice of 2 limes
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • ½ tsp smoked paprika (optional)
  • Salt & pepper to taste

For the Rice:

  • 1 cup jasmine or basmati rice
  • 2 cups chicken or vegetable broth
  • Juice of 1 lime
  • ¼ cup chopped cilantro

For the Avocado Layer:

  • 2 ripe avocados
  • Juice of ½ lime
  • Salt to taste
  • Optional: 1 tbsp Greek yogurt, pinch of chili powder

Toppings:

  • Fresh cilantro
  • Diced tomatoes
  • Jalapeños
  • Crushed tortilla chips or pepitas
  • Lime wedges
  • Greek yogurt or sour cream

Instructions
 

Marinate Chicken:

  • Combine honey, lime juice, garlic, olive oil, paprika, salt, and pepper. Coat chicken and marinate for at least 30 minutes.

Cook Chicken:

  • Sear chicken in a hot skillet until golden and cooked through. Let rest, then slice.

Prepare Rice:

  • Cook rice in broth. Once done, stir in lime juice and cilantro. Fluff with a fork.

Mash Avocado:

  • Mash avocados with lime juice and salt. Add optional yogurt or spices for extra flavor.

Stack Layers:

  • On each plate or bowl, layer rice → avocado → chicken → toppings. Use a ring mold for clean presentation.
