Ingredients
  

  • 1 lb carrots, peeled and halved lengthwise
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1–2 tbsp harissa paste (adjust to taste)
  • Salt & pepper to taste
  • 1 cup feta cheese
  • ½ cup Greek yogurt or cream
  • 1 tsp lemon zest
  • Fresh herbs (parsley, mint, or dill) for garnish
  • Optional: toasted nuts (pecans, pistachios, or almonds)

Instructions
 

  • Prep Carrots: Wash, peel, and cut carrots into halves or quarters.
  • Season: Toss carrots with olive oil, honey, harissa, salt, and pepper.
  • Roast: Spread evenly on a baking sheet. Roast at 425°F (220°C) for 25–30 minutes until tender and caramelized.
  • Make Whipped Feta: Blend feta with yogurt or cream until smooth. Add lemon zest for brightness. Chill until ready to serve.
  • Plate: Spread whipped feta onto a serving platter. Arrange roasted carrots on top.
  • Finish: Drizzle with pan glaze, garnish with herbs and optional nuts.
  • Serve: Enjoy warm for best flavor.
