Ingredients
  

  • 4 medium carrots, peeled and sliced into sticks or rounds
  • 2 cups fresh green beans, trimmed
  • 2 tbsp butter (or olive oil/vegan butter)
  • 2 tbsp honey (or maple syrup/agave)
  • 1 garlic clove, minced (optional)
  • 1 tbsp lemon juice or balsamic vinegar
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish

Instructions
 

  • Prep Vegetables: Wash, peel, and slice carrots. Trim green beans.
  • Blanch: Boil salted water. Cook carrots for 3–4 minutes, then add beans for 2–3 minutes.
  • Shock: Transfer immediately to ice water to preserve color. Drain well.
  • Make Glaze: Melt butter in skillet. Stir in honey, garlic, salt, and pepper until smooth.
  • Toss Vegetables: Add carrots and beans. Cook 3–5 minutes, stirring, until glossy and lightly caramelized.
  • Finish: Add lemon juice or balsamic vinegar. Garnish with herbs. Serve warm.

Notes

  • Don’t overcrowd the pan: Ensures caramelization instead of steaming.
  • Taste the glaze: Adjust sweetness or acidity before serving.
  • Variations: Add chili flakes for spice, cranberries and pecans for holidays, or soy sauce for Asian flair.
