Ingredients
  

  • 1 medium cauliflower, cut into florets
  • 1 can (15 oz) chickpeas, rinsed and drained
  • ½ cup fresh parsley, chopped
  • ½ cup fresh cilantro, chopped
  • ¼ cup fresh mint, chopped
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions
 

  • Prepare Cauliflower: Roast florets with olive oil, salt, and pepper at 400°F (200°C) for 20–25 minutes until golden, or steam lightly for crunch.
  • Ready Chickpeas: Rinse and drain canned chickpeas thoroughly.
  • Chop Herbs: Finely chop parsley, cilantro, and mint.
  • Make Dressing: Whisk olive oil, lemon juice, garlic, salt, and pepper until emulsified.
  • Combine: Toss cauliflower, chickpeas, and herbs in a large bowl. Add dressing and mix gently.
  • Garnish & Serve: Top with toasted seeds, nuts, or feta. Chill for 30 minutes before serving for best flavor.
