Ingredients
  

Soup Base:

  • 1/2 cup (120 ml) heavy cream or half-and-half
  • 1/2 cup (120 ml) white wine (optional)
  • 1 tsp salt, adjust to taste
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning or fresh herbs (thyme, basil, parsley)

Pasta:

  • 2 cups small pasta (mini lasagna noodles, broken rotini, or shells)

Cheese:

  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • 1/2 cup grated Parmesan

Optional Vegetables:

  • 1 cup spinach, zucchini, or mushrooms

Garnish (optional):

  • Fresh parsley or basil
  • Extra Parmesan
  • Toasted breadcrumbs or croutons

Instructions
 

  • Sauté Aromatics: Heat olive oil or butter in a large pot over medium heat. Sauté onions 3–4 minutes until translucent. Add garlic and cook 30–60 seconds.
  • Cook Chicken: Add chicken, season with salt, pepper, and Italian herbs. Cook until lightly browned or warmed through if pre-cooked.
  • Add Broth and Pasta: Pour in broth and optional white wine. Bring to a simmer, add pasta and optional vegetables. Cook until pasta is tender, 8–10 minutes.
  • Incorporate Cheeses and Cream: Reduce heat to low. Stir in ricotta, mozzarella, Parmesan, and cream. Adjust seasoning.
  • Serve & Garnish: Ladle soup into bowls. Top with fresh herbs, extra Parmesan, and toasted breadcrumbs if desired.
