- ¼ cup melted coconut oil
- 3 tbsp maple syrup

For the Caramel Layer:
- 1½ cups Medjool dates (pitted, soft)
- ¼ cup almond butter
- 2 tbsp maple syrup
- 1–2 tbsp warm water (as needed)
For the Chocolate Topping:
- 1 cup dark chocolate chips (dairy-free if needed)
- 1 tbsp coconut oil
Make the Shortbread Base:
Preheat oven to 350°F (175°C).
Line your 8x8-inch pan with parchment paper.
Mix almond flour, maple syrup, melted coconut oil, vanilla, and salt in a bowl until dough forms.
Press evenly into the bottom of the pan.
Bake for 10–12 minutes until lightly golden. Let cool completely.
Prepare the Caramel Layer:
In a food processor, blend the dates, almond butter, maple syrup, and warm water until smooth and creamy.
Spread evenly over the cooled shortbread.
Refrigerate or freeze for 20–30 minutes to firm up
Add the Chocolate Layer:
Melt the dark chocolate chips and coconut oil together (microwave or double boiler).
Pour and spread over the caramel layer.
Chill until fully set (about 1 hour).
Cut into 16 bars using a sharp knife.
