Instructions
 

  • Preheat Oven: Set oven to 350°F (175°C). Line baking pan with parchment.
  • Prep Carrots: Wash, peel, and finely grate carrots.
  • Mix Wet Ingredients: Whisk eggs, oil, sweetener, and vanilla until smooth.
  • Mix Dry Ingredients: Combine flour, baking powder, baking soda, salt, and spices.
  • Combine: Fold wet and dry mixtures together gently.
  • Add Carrots & Mix‑ins: Stir in grated carrots, nuts, raisins, or coconut.
  • Bake: Spread batter evenly in pan. Bake 25–30 minutes until toothpick comes out clean.
  • Cool & Frost: Cool completely before adding frosting. Slice into bars.
