Equipment

  • Sharp knife or mandoline
  • Frying pan (for bacon)
  • Mixing bowls
  • Whisk for dressing
  • Airtight container (for storage)

Ingredients

  • 3 medium cucumbers, thinly sliced
  • 6 slices bacon (or turkey bacon), cooked and chopped
  • ½ small red onion, thinly sliced (optional)
  • 1 tbsp vinegar or lemon juice
  • 2 tbsp olive oil or Greek yogurt
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Fresh dill or parsley for garnish

Instructions

  • Slice Cucumbers: Wash and slice cucumbers thinly; place in a large bowl.
  • Cook Bacon: Fry bacon until crispy (or chewy if preferred). Drain on paper towels, then chop into bite‑sized pieces.
  • Prepare Dressing: Whisk together olive oil (or yogurt), vinegar or lemon juice, garlic, salt, and pepper.
  • Combine Ingredients: Toss cucumbers with dressing until evenly coated. Add bacon and onion, mixing gently.
  • Garnish: Sprinkle with fresh dill or parsley.
  • Chill: Refrigerate for 30 minutes before serving for maximum crunch and flavor.

Notes

  • Use turkey bacon or lean cuts for a lighter version.
  • Keep cucumbers and dressing separate until serving to avoid sogginess.
  • Add feta cheese, cherry tomatoes, or bell peppers for extra flavor.
  • Best enjoyed fresh, but can be stored for up to 2 days in the fridge.
  • Perfect side dish for grilled meats, fish, or vegetarian mains.
