Ingredients
  

  • 1 lb lean beef (sirloin, flank, or ground beef)
  • 2 tbsp vegetable oil or sesame oil
  • 3 bell peppers (mixed colors), sliced
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 1-inch piece ginger, grated
  • 3 tbsp soy sauce (low-sodium)
  • 1 tbsp rice vinegar or lime juice
  • 4 cups cooked rice (brown, jasmine, or cauliflower rice)
  • 1 tbsp sesame seeds (optional)
  • Fresh cilantro or green onions for garnish
  • Salt & pepper to taste

Instructions
 

  • Prep beef: Slice beef thinly against the grain or season ground beef with soy sauce, garlic, and pepper.
  • Cook beef: Heat oil in wok/skillet. Stir-fry beef over high heat until browned. Remove and set aside.
  • Add aromatics: In the same pan, sauté garlic, ginger, and onion until fragrant.
  • Add peppers: Toss in sliced peppers. Stir-fry quickly (2–3 minutes) to keep them crisp.
  • Combine: Return beef to pan. Add soy sauce and rice vinegar. Stir until everything is coated.
  • Prepare rice base: Fluff cooked rice and season lightly with sesame oil.
  • Assemble bowls: Layer rice, top with beef and peppers, sprinkle sesame seeds, and garnish with herbs.
