Ingredients

  • 1 lb lean ground turkey (93% or higher)
  • 2 medium sweet potatoes, peeled and cubed
  • 1 zucchini or 1 bell pepper, chopped
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil

Seasonings:

  • 1 tsp paprika
  • ½ tsp cumin
  • Salt and pepper to taste

Optional Add-ins:

  • ½ cup shredded cheddar or parmesan
  • 1 cup fresh spinach
  • ¼ tsp chili flakes

Instructions
 

  • Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Roast sweet potatoes: Toss with 1 tbsp olive oil, salt, and pepper. Roast for 20–25 minutes until golden and tender.
  • Sauté turkey mixture: In a skillet, heat 1 tbsp olive oil. Add onion and garlic, cook until fragrant. Add turkey, paprika, cumin, salt, and pepper. Cook until browned. Stir in zucchini or bell pepper and cook 3–4 minutes.
  • Combine and bake: In a baking dish, mix roasted sweet potatoes with turkey mixture. Add spinach and cheese if using. Stir to combine.
  • Bake: Bake for 15–20 minutes until bubbly and golden.
  • Garnish and serve: Top with fresh herbs, avocado slices, or a drizzle of yogurt.
