Grilled Shrimp Caesar Wraps

Ingredients
  

  • 1 lb medium-large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Juice of 1 lemon
  • Salt and freshly ground black pepper, to taste
  • 4 large flour tortillas (or whole wheat/spinach wraps)
  • 4 cups romaine lettuce, washed and chopped
  • ½ cup Caesar dressing (store-bought or homemade)
  • ½ cup freshly grated Parmesan cheese
  • Optional: croutons for crunch
  • Optional: red pepper flakes for spice

Instructions
 

  • In a bowl, toss shrimp with olive oil, minced garlic, lemon juice, salt, and pepper. Let marinate for 10–15 minutes.
  • Preheat grill or grill pan to medium-high heat. Lightly oil the grill grates or pan.
  • Grill shrimp for 2–3 minutes per side until pink and opaque. Remove from heat.
  • Meanwhile, toss chopped romaine lettuce with Caesar dressing in a large bowl.
  • Warm tortillas briefly to soften (microwave for 15 seconds or warm in a dry skillet).
  • Assemble wraps by layering dressed lettuce, grilled shrimp, and Parmesan cheese on each tortilla. Add croutons or red pepper flakes if desired.
  • Fold in sides and roll tightly to enclose filling. Serve immediately, optionally slicing in half.

  • To avoid soggy wraps, dry lettuce thoroughly and add dressing just before assembling.
  • Substitute grilled chicken or tofu for shrimp to vary proteins.
  • For gluten-free options, use gluten-free wraps or large lettuce leaves as wraps.
