Equipment

  • Grill (gas or charcoal)
  • Skewers (metal or soaked wooden)
  • Mixing bowl for marinade
  • Tongs
  • Sharp knife and cutting board

Ingredients

  • 1 lb shrimp, scallops, salmon, or firm white fish (cut into chunks)
  • 2 bell peppers, cut into pieces
  • 1 zucchini, sliced into rounds
  • 1 red onion, cut into wedges
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano or parsley
  • Salt and pepper to taste
  • Fresh herbs and citrus wedges for garnish

Instructions

  • Prep Seafood & Veggies: Cut seafood and vegetables into uniform bite-sized pieces.
  • Make Marinade: Whisk olive oil, lemon juice, garlic, herbs, salt, and pepper. Toss seafood and vegetables in marinade for 20–30 minutes.
  • Skewer Ingredients: Thread seafood and vegetables alternately onto skewers, leaving small gaps for even cooking.
  • Grill: Preheat grill to medium-high. Place skewers on grates, turning every 2–3 minutes. Cook until seafood is opaque and vegetables are lightly charred (8–10 minutes).
  • Serve: Transfer skewers to a platter, garnish with fresh herbs and citrus wedges, and serve hot.

Notes

  • Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
  • Use firm fish like salmon or halibut to avoid crumbling on the grill.
  • Don’t over-marinate seafood—20–30 minutes is plenty.
  • Pair skewers with light sides like couscous, rice pilaf, or grilled bread.
  • Add pineapple or mango chunks for a tropical twist.
