- 8 oz halloumi cheese, drained and cut into 1-inch cubes
- 1 lemon, zested and juiced
- 2 tbsp olive oil
- 2–3 garlic cloves, minced
- 1 tbsp fresh thyme leaves (or 1 tsp dried)
- Freshly ground black pepper, to taste

Prep Halloumi: Pat the halloumi dry and cut into bite-sized cubes (1–1½ inches).
