Ingredients
  

  • 1 ½ lbs boneless chicken thighs or breasts
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp dried oregano
  • Salt & pepper to taste
  • 4 medium potatoes, cut into fries
  • 2 tbsp olive oil (for fries)
  • 1 tsp dried rosemary or oregano
  • 1 cup Greek yogurt
  • ½ cucumber, grated & drained
  • 1 garlic clove, minced
  • 1 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Pita bread, tomato slices, onion, and feta for serving

Instructions
 

  • Marinate Chicken: In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper. Coat chicken and marinate for at least 30 minutes.
  • Prepare Tzatziki: Grate cucumber, squeeze out excess water, then combine with yogurt, garlic, dill, lemon juice, and olive oil. Chill until serving.
  • Cook Fries: Toss potato strips with olive oil and rosemary. Bake at 425°F (220°C) for 20–25 minutes until golden and crisp.
  • Grill Chicken: Cook chicken on a grill pan or barbecue until charred and juicy (internal temp 165°F / 74°C). Rest before slicing.
  • Assemble Plate: Arrange fries, sliced chicken, tzatziki, pita, and salad on a plate. Garnish with feta and fresh herbs.
