Ingredients
  

For the roasted garlic:

  • 1 whole garlic bulb
  • 1 tsp olive oil

For the white sauce:

  • ½ cup ricotta cheese
  • ¼ cup cream cheese
  • ¼ cup grated Parmesan
  • 1–2 cloves roasted garlic
  • 1–2 tbsp cream or milk
  • Pinch of nutmeg (optional)

For the pizza:

  • 1 ball pizza dough (store-bought or homemade)
  • 1 cup fresh spinach (or ½ cup frozen, thawed and drained)
  • ½ cup crumbled feta cheese
  • 1 cup shredded mozzarella
  • 2 tbsp grated Parmesan
  • 1 tsp dried oregano
  • Olive oil for drizzling
  • Optional: honey, fresh oregano or arugula for garnish

Instructions
 

Roast the garlic:

  • Preheat oven to 400°F (200°C).
  • Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil.
  • Roast for 35–40 minutes until soft and golden. Let cool, then squeeze out cloves.

Make the white sauce:

  • In a bowl, mix ricotta, cream cheese, Parmesan, roasted garlic, and cream.
  • Blend until smooth and spreadable. Add nutmeg if desired.

Prepare the dough:

  • Roll out dough to desired thickness. Place on a baking sheet or preheated stone.

Assemble the pizza:

  • Spread white sauce over dough, leaving a ½-inch border.
  • Layer spinach, feta, mozzarella, and Parmesan.
  • Sprinkle oregano and drizzle with olive oil.

Bake:

  • Bake at 475°F (245°C) for 12–15 minutes until crust is golden and cheese is bubbly.

Garnish and serve:

  • Optional: drizzle with honey and top with fresh oregano or arugula.
