  • Add eggs one at a time, beating well after each addition. Scrape down sides as needed to ensure even mixing.
  • In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.
  • Gradually fold the dry ingredients into the wet mixture with a spatula, gently mixing until just combined—avoid overmixing.
  • Fold in the melted chocolate, vanilla extract, and espresso powder (if using) until evenly incorporated.
  • Pour batter into the prepared pan, smoothing the top. Tap gently on the counter to remove air bubbles.
  • Bake for 55–65 minutes, or until a toothpick inserted into the center comes out with moist crumbs but no wet batter.
  • Cool the cake in the pan for 15–20 minutes, then carefully remove it and transfer to a wire rack to cool completely before slicing.
