Ingredients
  

  • 3 cups bread flour
  • 1 packet (2¼ tsp) active dry yeast
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup cottage cheese, blended smooth
  • ½ cup warm water
  • 1 tbsp olive oil
  • ½ cup freshly grated Parmesan cheese
  • 2 garlic cloves, minced (or 1 tsp garlic powder)
  • Garnishes: parsley, chives, or extra Parmesan

Instructions
 

  • Make dough: Mix flour, yeast, salt, and sugar. Blend cottage cheese until smooth, then add with warm water and olive oil. Stir until dough forms.
  • Knead: Knead 8–10 minutes until smooth. Place in oiled bowl, cover, and let rise 1–1½ hours.
  • Shape bagels: Punch down dough, divide into 8 pieces, form balls, and poke holes to shape bagels.
  • Prepare topping: Mix Parmesan and garlic.
  • Boil bagels: Boil each bagel 1–2 minutes per side in a pot of water with 1 tbsp sugar.
  • Bake: Place on baking sheet, brush with olive oil, sprinkle topping, and bake at 400°F (200°C) for 20–25 minutes until golden.
  • Cool and serve: Rest briefly, then enjoy warm with butter or cream cheese.
