Ingredients

  • 1 ½ lbs sirloin, ribeye, or tenderloin (cut into 1-inch cubes)
  • 2 tbsp olive oil
  • 2 tbsp butter (clarified preferred)
  • 3 garlic cloves, minced
  • Salt & black pepper to taste
  • Fresh parsley for garnish

Parmesan Cream Sauce:

  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 garlic cloves, minced
  • 1 tbsp butter
  • Salt & pepper to taste
  • Optional: splash of white wine or sautéed mushrooms

Instructions
 

  • Prepare steak: Pat cubes dry with paper towels. Season generously with salt and pepper.
  • Heat skillet: Place cast-iron skillet over high heat until very hot.
  • Sear steak: Add olive oil, then steak cubes. Sear 2–3 minutes per side until crust forms. Cook in batches to avoid overcrowding.
  • Make garlic butter: In a small pan, melt butter and sauté minced garlic until fragrant. Toss seared steak bites in garlic butter.
  • Prepare sauce: In a saucepan, melt butter, add garlic, then stir in cream. Simmer gently. Add Parmesan and whisk until smooth and thickened. Season with salt and pepper.
  • Serve: Plate steak bites, drizzle with Parmesan cream sauce or serve sauce on the side. Garnish with parsley.
