Ingredients
  

  • 1½ lbs steak (sirloin, ribeye, NY strip, or tenderloin), cut into bite-size cubes
  • Salt and pepper, to taste
  • 1 tbsp olive oil (or avocado oil)
  • 3 tbsp unsalted butter (grass-fed recommended)
  • 4 cloves garlic, minced

Optional seasonings:

  • ½ tsp smoked paprika
  • ¼ tsp chili flakes
  • Fresh rosemary or parsley, chopped (for garnish)
  • Zest of ½ lemon (for brightness)

Instructions
 

Prep the Steak:

  • Pat steak cubes dry with paper towels. Season generously with salt, pepper, and optional paprika or chili flakes.

Sear the Steak Bites:

  • Heat oil in a hot cast iron skillet over medium-high. Sear steak in batches to avoid crowding, 1–2 minutes per side until browned. Remove to a plate.

Make Garlic Butter Sauce:

  • Lower heat to medium. Add butter to the pan. Once melted, stir in minced garlic. Sauté for 30–45 seconds until fragrant (do not brown the garlic).

Combine & Finish:

  • Return steak bites to skillet and toss in garlic butter until well coated. Optional: add lemon zest or chopped herbs.

Rest & Serve:

  • Remove from heat and let steak bites rest for 3 minutes. Serve warm as an appetizer or over zoodles, cauliflower mash, or a side salad.
