  • Spatula or spoon
  • Plastic wrap
  • Serrated knife

Ingredients

  • 4 large flour tortillas (gluten-free if needed)
  • 8 oz cream cheese or hummus
  • 1 cup spinach leaves
  • 1 cup bell peppers, thinly sliced
  • 1 cup cucumbers, thinly sliced
  • ½ cup shredded carrots
  • ¼ cup fresh herbs (parsley or cilantro)
  • Salt & pepper, to taste

Instructions

  • Prepare Tortillas: Lay tortillas flat on a clean surface.
  • Spread Filling: Evenly spread cream cheese or hummus over each tortilla.
  • Layer Vegetables: Arrange spinach, peppers, cucumbers, carrots, and herbs in thin layers.
  • Roll Tightly: Starting from one edge, roll tortillas into logs.
  • Chill: Wrap rolls in plastic wrap and refrigerate for 30 minutes to firm.
  • Slice & Serve: Use a serrated knife to cut into 1-inch pinwheels. Arrange on a platter and serve.

Notes

  • Pat vegetables dry before layering to avoid soggy tortillas.
  •  Don’t overstuff—thin layers make neat slices.
  •  Chill before slicing for clean pinwheels.
  •  Pair with dips like salsa, guacamole, or ranch.
  •  Wrap tightly in plastic wrap if making ahead.
