Ingredients
  

  • 4 ears fresh corn (boiled, grilled, or raw)
  • 2 cups ripe cherry or heirloom tomatoes, halved
  • ¼ cup fresh basil or cilantro, chopped
  • 3 tbsp olive oil
  • 2 tbsp lemon juice or vinegar
  • 1 tsp honey or Dijon mustard (optional)
  • Salt & pepper to taste

Instructions
 

  • Prepare corn: boil, grill, or slice raw kernels off the cob.
  • Cut tomatoes into halves or wedges.
  • Whisk olive oil, lemon juice/vinegar, honey/Dijon, salt, and pepper into a dressing.
  • In a large bowl, combine corn, tomatoes, and herbs.
  • Toss gently with dressing.
  • Chill for 15 minutes before serving.

  • Grill corn for smoky flavor.
  • Use heirloom tomatoes for color variety.
  • Add avocado, feta, or jalapeños for creative twists.
  • Dress just before serving to avoid sogginess.
