  • 2 tbsp butter or olive oil
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme (or ½ tsp dried)
  • 1 cup beef or chicken broth
  • 1 cup uncooked orzo pasta
  • 2 cups cooked chicken (shredded or cubed)
  • ½ cup heavy cream (or sour cream/cream cheese)
  • 1½ cups shredded Gruyère, Swiss, or mozzarella cheese
  • 1 cup crispy fried onions (optional topping)
  • Salt and pepper to taste
  • Fresh parsley or thyme for garnish

Instructions
 

  • Caramelize Onions In a large skillet, melt butter or oil over medium-low heat. Add sliced onions and cook slowly, stirring often, until deeply golden—about 20–25 minutes.
  • Add Garlic and Herbs Stir in garlic and thyme. Cook for 1–2 minutes. Deglaze with broth, scraping up browned bits.
  • Combine Base Stir in uncooked orzo, cooked chicken, and cream. Season with salt and pepper.
  • Transfer and Top Pour mixture into a greased 9x13-inch casserole dish. Sprinkle cheese evenly on top.
  • Bake Bake uncovered at 375°F for 25–30 minutes until bubbly and orzo is tender.
  • Optional Broil Top with crispy onions and broil for 2–3 minutes until golden.
  • Rest and Serve Let casserole rest for 5–10 minutes before serving. Garnish with fresh herbs.
