  • 2 cups whole milk
  • 1 cup heavy cream
  • 6 oz high-quality dark chocolate (70% cocoa), melted

Instructions
 

  • Prepare Pastry Base: Roll out pastry and fit into tart pan. Blind bake at 350°F (175°C) for 15 minutes.
  • Make Custard: Heat milk and cream until just simmering. In a bowl, whisk eggs, sugar, cornstarch, and vanilla until smooth.
  • Infuse Chocolate: Stir melted dark chocolate into warm milk mixture. Slowly temper into egg mixture, whisking constantly.
  • Bake Flan: Pour custard into pastry shell. Bake at 350°F (175°C) for 35–40 minutes, until set but slightly wobbly in the center.
  • Cool & Chill: Allow to cool completely, then refrigerate for at least 4 hours (overnight preferred).
  • Slice & Serve: Cut with a sharp knife for clean slices. Garnish with whipped cream or berries if desired.
