Ingredients
  

  • 1 whole turkey (12–14 lbs), thawed
  • ½ cup unsalted butter, softened
  • 4 garlic cloves, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh sage, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp salt
  • 1 tsp black pepper
  • 1 lemon, halved (optional for cavity)
  • 1 onion, quartered (optional for cavity)

Instructions
 

  • Prep Turkey: Pat dry with paper towels. Remove giblets.
  • Season: Mix butter, garlic, herbs, salt, and pepper. Rub under the skin and over the turkey. Place lemon and onion inside cavity if desired.
  • Roast: Place turkey breast-side up on rack in roasting pan. Roast at 325°F (165°C), about 15 minutes per pound.
  • Monitor: Use meat thermometer — breast should reach 165°F (74°C), thighs 175°F (79°C).
  • Rest: Tent loosely with foil and rest 30 minutes before carving.
