Ingredients
  

  • 1 lb ground chicken (or diced breast/thigh)
  • 4–5 garlic cloves, smashed
  • 2 shallots, sliced
  • 4–6 Thai chilies, smashed (adjust to taste)
  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tsp dark soy sauce
  • 1 tsp sugar
  • 1 cup Thai holy basil leaves (or Thai sweet basil substitute)
  • 2 tbsp vegetable oil
  • Optional: fried egg topping, cucumber slices

Instructions
 

  • Prepare Aromatics Smash garlic and chilies with mortar and pestle or chop finely. Slice shallots.
  • Cook Chicken Heat oil in wok over high heat. Add garlic, chilies, and shallots; stir-fry until fragrant. Add ground chicken, breaking it up, and cook until browned.
  • Add Sauces Stir in soy, fish, oyster, dark soy, and sugar. Toss until chicken is coated and sauce slightly caramelizes.
  • Finish with Basil Add basil leaves, stir until wilted. Remove from heat immediately.
  • Serve Plate over jasmine rice, top with fried egg, and garnish with cucumber slices.

  • Use holy basil: Authentic peppery aroma.
  • Cook on high heat: Creates wok hei flavor.
  • Don’t overcrowd pan: Prevents steaming.
  • Adjust spice: Reduce chilies for milder heat.
